Tasty Peppered Mussels (Italian “Pepata di Cozze”)

The taste of the sea, at your table. 

Ingredients for 4 servings:

  • 1/4 cup extra-virgin olive oil, plus more for drizzling
  • 4 cloves garlic, thinly sliced
  • 1 fresh red chilli, thinly sliced into rings
  • 3 pounds black mussels, scrubbed and cleaned
  • salt
  • 1.5 cups dry white wine
  • 1/4 cup finely chopped Italian parsley
  • freshly ground black pepper, in large amounts (or white)
  • juice of one lemon

Follow these steps:

Heat the oil in a large pan on the largest burner your stove has. . Add garlic, chilli and cook until garlic is slightly brown. Then remove the garlic and throw it away.

Add the mussels to the pan and cook very briefly. Add the wine and a light sprinkling of salt. Cover the pan and cook until the mussels just open.

Lower the heat, remove the cover and grind a good amount of black pepper over the mussels. Don’t be afraid to use a lot.

If you like it red, you can add some tomato sauce or tomato paste plus a teaspoon of white sugar. Don’t exaggerate with the tomato sauce or it will overpower the taste of the mussels. 

Remove from the heat. Add the parsley, a drizzle of quality extra-virgin olive oil, and if you like, squeeze the lemon juice over the top.

Transfer to a serving bowl and serve with toasted bread.

Try it with the Wild Cubeb pepper to give it a stronger flavour!
