Superquick Bacon and Green Pepper Scallops

A ridiculously easy recipe for the most refined entree!

Ingredients for 4 servings:

  • 4 clean scallops
  • 2 slices of bacon
  • 1/2 glass of Cognac
  • 1 spoon of Green Peppercorns
  • 20 g of butter
  • salt

Follow these steps:

This is a super easy and very quick recipe, but it will make you look like a great chef!

Start by removing the molluscs from the valve with a small knife, being careful not to ruin the precious and delicious body of the scallops. Rinse them under running water and dry them with kitchen paper.

Cut the bacon into small chunks. Crush the pepper in a mortar or with a knife blade.

Heat a non-stick pan, add the bacon without any additional fat. Cook over a high flame until it releases its fat and becomes very crispy (at your taste).

Remove the bacon and keep it warm in a dish covered with another on top, drain its fat from the pan into a cup, we may use a bit to season the scallops at the end.

Clean the pan with kitchen paper, add the butter and melt it until it is bubbly. Add the scallops, cook about half a minute on each side (1-minute maximum), season with salt, sprinkle with Cognac and let it evaporate.

Add the chopped pepper and bacon, mix and serve in the washed and dried shells. If it’s too dry, add one teaspoon of fat from the cooked bacon on top of the scallops, but don’t exaggerate or you won’t feel the scallops’ taste.

You can add some zest of lemon grated on top if you like.

Fancy hint:

The scallops have a light taste, so make sure you use only the lighter peppers or they’ll cover the mollusc’s taste.

Green peppercorns are great, but also the Szechuan family of peppers can add an exotic flavour that combines perfectly with the scallops!
