White Peppercorn – The Naked Berry

As you might know, or not, white pepper is actually the seed of the ripe fruit of the pepper plant, also known as… black pepper. These prime quality white peppercorns have a stronger peppery aroma with earth and herb notes because of the different level of ripeness and the retting process. The ripe berry and it is primarily used by chefs in white or light colour dishes to provide a kick but without the visual impact. However, we recommend you try using it to create a contrast by grinding it coarse over a steak or green pan-fried veggies.

When the Pepper Berry is at its ripest the fruits are collected and soaked in water. After 7 days their darker-colour skin and pulp soften and decompose. They are then rubbed against each other until what remains of the fruit is the white naked seed. White pepper tends to be used mostly for its heat without the perceived pungency of black pepper. However, if you choose to give a more important role in a dish you will be heavenly surprised.

The pepper is commonly used in Chinese and Thai cooking, where it is added to staples such as Egg Fried Rice or Hot and Sour Soup. Its reputation is, of course, universal being part of original Swedish Meatball recipes or Portuguese Garlic and Pepper Sauce. For an original experience try putting a bit on melon.

Taste Notes:

White pepper has a floral earthy flavour with the spicy flavour being removed with the black coat.

Use it with:

It’s very versatile, but it’s absolutely extraordinary with dark meals, potatoes and sauces (both white and dark ones).
