Black pepper is produced by briefly cooking the green, unripe berries of the pepper plant, in hot water to clean and break the skin for the browning enzyme to start working. The berries are then dried in the sun for several days, a period in which the flesh of the fruit shrinks and shrivels around the seed giving them the look we all love.
Levels of pepper oils are some of the highest from this species.
