Peppery Grilled Peaches

Everyone has had a peach in his or her life, but have you ever had a grilled and spicy one?!

Ingredients for 4 servings:

  • 1/2 cup brown sugar, plus more, for sprinkling
  • 1/4 cup water
  • 1/4 cup fresh lime juice
  • 1/4 cup basil leaves
  • Olive oil
  • 4 large peaches, cut in halves
  • Tellicherry Black Peppercorns

Follow these steps:

Start by creating the dressing for the peaches. In a small saucepan melt 1/2 cup of brown sugar with the quarter of cup water over medium heat, keeping stirring until completely dissolved.

Turn off the heat and add the lime juice and basil leaves and stir again. You don’t need to caramelise the mix, so don’t cook the sugar too much. Then let it stand for at least 15 minutes or up to 1 hour, then discard the basil leaves. 

Once the time has passed, light a grill or preheat a grill pan over medium heat; lightly oil the grates. Lightly sprinkle the peaches with brown sugar and grill cut side down until dark brown grill marks form, about 2 minutes per cut side.

Transfer the peaches to bowls and season with a little black pepper. Spoon some of the syrup on top, sprinkle with basil leaves and serve.

Fancy hint:

Grilled tastes go very well with strong black peppers like Voatsiperifery Pepper or the Wild Cubeb black pepper.

If you like a more delicate and aromatic taste you should try the grilled peaches with the Nepalese Timur pepper or with the amazing Japanese Sancho pepper.
