Turkey is common and traditional in many countries. But you’ve never had it like in this before!
Ingredients for 12 servings:
- 2 cloves garlic, peeled and minced
- 1 tablespoon finely chopped fresh basil
- 1/2 teaspoon ground Tellicherty black pepper
- 2 (1.5 kg) boneless turkey breast halves
- 6 whole cloves
- 1/4 cup vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons lemon juice
- 1 tablespoon brown sugar
Follow these steps:
Prepare the marinade by mixing the garlic, basil, pepper and some olive oil in a bowl.
Rub over the turkey breasts massaging the meat to let spices and flavours stick.
Insert one clove into each end of the turkey breasts, and one in the centre.
In a large shallow dish, blend olive oil, soy sauce, lemon juice, and brown sugar.
Place the breasts in the dish, and turn to coat. Cover, and marinate in the refrigerator for at least 4 hours. The more you leave it the more it absorbs the tastes of the marinade.
Preheat grill for high heat. Lightly oil the grill grate using a sprig of rosemary soaked in olive oil.
Place turkey breasts on the grill. Close the lid (if your barbecue has one), and grill turkey breasts about 15 – 20 minutes on each side.
If you have a meat thermometer, the internal temperature of the turkey should be around 68 degrees C.
The turkey meat is not that different from the chicken, therefore you can use the same spices for the dressing.
