Italian Pasta with Ricotta Cheese

The perfect first course for both kids and adults!

Ingredients for 4 servings:

  • 400 g of half-sleeves pasta
  • 250 g of ricotta cheese
  • 100 g of grated Parmesan cheese
  • the zest of 1/2 unwaxed lemon
  • fresh basil, roughly chopped
  • extra virgin olive oil
  • salt
  • black pepper or lemon pepper

Follow these steps:

Making pasta with ricotta is a very simple but extremely satisfying first course.

Boil the water, salt it and dip the pasta into it for 10-12 minutes (check the package).

Mix the ricotta in a bowl with the grated Parmesan, the oil, the salt, a generous amount of pepper, the basil and the grated lemon zest.

Before draining the pasta, save a cup of the cooking water. Drain the pasta and put it into the bowl with the ricotta and mix, adding the cooking water a little at a time, until you get a creamy dressing.

Transfer the pasta with the ricotta to plates and serve immediately, with basil leaves on top.

Fancy hint:

Try it with the lemon pepper or with the smoked one and you’ll never stop wanting a spoon more!
