Fancy Pepper and Vanilla Rice

A surprising main course that will amaze your guests! Try it also as a side dish with poultry!

Follow these steps:

To cook the rice first put water into pot water, about twice the amount of rice, and wait until it boils. Add a bit of salt and then pour in the rice, let it cook for 8-10 minutes.

Grate the cheese so that it will be ready for you to use. Take the vanilla bean, cut it in half and take the seed using the tip of a knife then add the seeds in the cooking water and stir it.

Pepper time! Crush your peppercorns, which should be of at least three varieties one aromatic, one strong and one fragrant – the more the merrier obviously!

Add the cheese to the pot, always stirring and keeping low heat. Once the cheese has been incorporated, switch the heat off and cover the pot with a plate. Let it sit for a couple of minutes.

Final step: Take the plate off, add the pepper crushed and the butter and mix vigorously in a creamy consistency.

Your rice with lots of pepper flavours is ready to be enjoyed!

Fancy hint:

For this recipe, you need at least 3 types of pepper for the best result: the Ethiopian Timiz pepper, a strong black one (i.e. the Voatsiperifery pepper, or the Wild Cubeb or the Black Tellicherry pepper) and a good Szechuan pepper (like the Chinese Szechuan or the Japanese Sancho)
