Cheese Tagliolini with Green Pepper

A pinch of good pepper is all that is needed to make a simple dish of pasta a masterpiece!

Ingredients for 4 servings:

  • 320 g of tagliolini
  • salt

To condition:

  • 40 g of butter
  • 50 g of grated Parmesan
  • 2 yolks
  • 2 spoons of cream
  • 10 green peppercorns
  • salt

Follow these steps:

Boil the water. In the meantime, toast quickly the green peppercorns to release their aroma (about a couple of minutes).

Then mix the yolks with half grated Parmesan, the butter and the cream and add them to a bain-marie over the pot with the boiling water. Keeping mixing it till it has the consistency of a cream.

For the pasta: salt the water, dip the tagliolini, cook them for about 7-8 minutes and drain them “al dente”.

Then pass them on the recipient with the mixture, mix everything gently, sprinkle the peppercorns and the remaining Parmesan grated. Plate and serve hot.

Fancy hint:

A good alternative to the green peppercorns is the white one, White Penja or Wynad White peppers, in particular, will give your food the WOW factor.

Also, you can add the peppercorns even in the mixture before putting it heating in a bain-marie, in order to give your dish a stronger flavour of pepper.

But be careful about the pepper you chose in case, its taste will resonate wildly in your dish!
